My mom did the Whole Life Challenge recently and found a bunch of new recipes that are healthy and delicious! One of our favorites is these cocoa almond date energy bites; they only take about ten minutes to make, they’re gluten free, have no added sugar, you don’t have to bake them, and they’re super delicious! Plus they are great for a little energy boost mid-afternoon (much better than the chips or pretzels I usually snack on!)
If you’re looking for a quick, easy, healthy snack, these cocoa almond date energy bites are perfect!
No Bake Cocoa Almond Date Energy Bites
Ingredients:
- 1 C pitted dates
- 1 C almonds
- 1 Tbsp coconut oil
- 1 tsp ground cinnamon
- 1 Tbsp cocoa powder
- ⅛ tsp salt
- 1 C shredded coconut
Directions:
Put all of the ingredients except the shredded coconut in your food processor. Put the lid on, and pulse until the mixture resembles cookie dough (it’s okay if it’s slightly crumbly).
Roll small handfuls of the dough into 1-inch balls between your hands, then roll the balls in shredded coconut to cover the outsides. And that’s it; they’re ready to eat! No need to bake or freeze or let sit or anything!
If you aren’t planning to eat these energy bites right away, stick them in the fridge in an airtight container. They’ll keep for days in the fridge, and you can easily just take one or two out whenever you need a healthy snack!

Jessi these treats are not sugar free. You could say there is no extra added sugar.
Dates and coconut contain quite a bit of sugar.
If you google the calorie content of each item you will see that there is a total of 826 calories.
1 Cup of chopped dates are 414 calories (16 g of sugar), the coconut that you roll the cookie in has 283 calories (5 g of sugar).
These sound yummy but they are loaded with calories and I know you would not purposely deceive anyone.

Good point Cathy! You certainly don’t add any sugar in this recipe, but the fruits do naturally contain sugar!
